Rainbow Cupcakes

These are all the rage at the moment with rainbow birthday parties and baby showers. You can use a mix of any colours you like. Just make your cupcake mix as normal. Pour equal amounts into 4 or 5 different bowls and tint with some food dye of choice. Place blobs of each one in the patty case. Repeat for all patty cases. Then bake as normal. Vanilla Bean Cupcakes with Buttercream Icing

Liz asked if I had a good vanilla cupcake recipe. I sure do! These are my fave, fave, fave cupcake recipe and are very addictive. I will be honest and say I prefer to make these in my kitchenaid mixer as I find the mix comes out nice and fluffy but in saying that there is nothing wrong with the Thermomix version either. They are very similar. These are delicious. You can freeze these un iced too.

Firm Jellies/Lollies

I'm experimenting and trying to make my own gummy lollies. These are more of a very firm jelly texture and not the right texture to be classed as a gummy lolly in my books. These would be good for the lunch box as they hold their shape really well or for parties. You could do a rainbow of colours.

Nut and Seed Chocolate Bars

Those that know me know that if you gave me an hour in an Allen's lolly factory there would be nothing left! I love lollies. In a bid to eat healthier I've made some nut and seed chocolate bars today that I can have a little piece of when cravings set in. Candy Cane Bark

Need a last minute gift but short on ingredients and time? This is for you! It's surprisingly delicious. Dark chocolate works extremely well for this. {Candy Cane Bark} 200g cooking chocolate of choice 3 candy canes Place candy canes into tmx. Turbo twice or until desired consistency is achieved. It's just a rough chop. Remove from bowl. With a dry cloth wipe out the tmx bowl or wash out if preferred. Place chocolate in to bowl. Melt at 50 degrees, speed 3 for approximately 2-3 minutes. Thermomade Freckles

I'm adding these to a Christmas hamper in a bag but they would make great cupcake or cake decorations too! Raspberry Filled Chocolate Balls

Originally posted to our Facebook page 12th December 2013. I wish the photo showed how delicious these are. They are right up there with the Mars Bar Balls I posted last week. Chocolate and raspberries are always a winner in my book. The tartness of the raspberries, the bitterness from the cocoa and the sweetness from the condensed milk is deeeeeeeeelicious!!! It all just works. Let's just say I didn't stop at one.

Chocolate Balls

Very versatile base recipe. The trick is to use a flavorsome cocoa powder (or cocao). Surprisingly I love love love Homebrand 100% pure cocoa. The taste is rich and delicious!!!

Cookies & Cream Fudge

I'm in heaven. There are fancier versions of this out there I'm sure but this is perfectly fine for me. I had a few spare ingredients leftover from my cookies and cream chocolates and milo balls so made this up as I went along. This is just a small batch. I would recommend doubling it if giving for gifts.

Fudge Centred Truffles

These are so easy and are my go to recipe for Easter and Christmas gifts. I box these up in noddles boxes with ribbon and gift cards. You can vary the flavours used to include what you have on hand or your preferences. All you need is some ice cube trays if you don’t have any chocolate moulds on hand.
