Hot Chocolate Marshmallow Tart with Tim Tam Crust

The lovely Natasha sent me this recipe (she knows me too well) and I thought I would try it for dessert the other night as my best friend is coming over.    This was surprisingly easy and fairly straightforward.   The recipe calls for 200g Tim Tim's for the crust. I used a 22 spring form pan and there is no way I could have gotten a crust from just 200g so I have tweaked the base slightly. You don't have to use Tim Tams. Garlic Beef Turkish Pide

This turned out great! Mine is a bit thicker than normal pide so next time I'll roll it thinner and make two from the dough. Ill use half the filling on each one. If you find the dough a little sticky add more flour. This will be sticker than regular dough.  You can vary the fillings to suit your tastes. For this recipe you will need one batch of shredded garlic beef.

Shredded Garlic Beef

Shredded chicken is so popular in our house and something we always have in the freezer. I thought Id give beef a whirl. I've used my TRTLMT garlic seasoning to season this but you could anything you like. Use any marinade or spice blend you like. Use this beef in: Pies Pides Pizzas Sandwiches and bread rolls Pizza pockets Fried rice

Garlic Seasoning

Combine with some olive oil for a yummy marinade or use as a meat rub. This reminds me a little  of souvlaki flavours. Sorry for the mix match of using grams and spoon measurements. Some were hard to get a weight.

Shredded Chicken

  I think this is one of my favourite things the Tmx can do! This is a great filler for a sandwich, healthy and much more cost effective than deli meats. I can buy chicken breasts for $8.99 a kilo (a little more for organic and or free range). If you have a look at the deli the cheapest processed chicken roll meat is over $12.00 a kilo. I know which one I prefer. I marinate two chicken breasts, cut into 6 pieces each, in a homemade marinade or seasoning blend and steam in the Varoma for 25 mins. Teriyaki Chicken Fried Rice

We often get so caught up on having to make things from scratch that we often forget that its ok to use a packet sauce too if you prefer or need a quick meal. A lot of us still have a few pre mixes and sauces in our pantries still. Use them up in the tmx!    The beauty of these types of dishes is you can vary the sauce and veggies to suit your tastes.    Such an easy all in one meal.

4 Ingredient Tuna Patties

Look out 4 Ingredient ladies! Haha This is a great recipe to use up those surplus little tins of Tuna in the pantry. Because there is so much flavour in the tuna you don't need lots of other ingredients to make these tasty. You can add extra vegetables to them but I serve these with salad so don't any add to the patties.

Pizza Pops

  An easy but delicious lunch here today! These are like my pizza pockets but a bite size, pull apart version. GREAT for the kiddies and especially for parties or lunchboxes. Simply roll out small balls of pizza dough of choice. I use the below recipe of mine. This is plenty for 32 pizza pops. You can halve it if you prefer if you want a tray of 16 as shown in the photo. Pizza Pockets

Transferred from my FB page - a very popular recipe! Tonight I thought I'd experiment with dinner. Instead of the usual pizzas I thought I'd try pizza pockets for the kiddies. They are so simple! You just roll out small balls of pizza dough of choice (See my bread tips here for my  go to recipe.), top with sauce and filling ingredients, roll up into a ball by dragging edges towards the centre, flip over, brush with milk and bake for approximately 20-30 minutes. Chimichangas

These are so easy, tasty and very adaptable to suit different tastes. This is todays version but you can tweak them to how you like. You can use mince or shredded beef instead. Vary the filling to include veggies you like such as corn kernals, carrot ribbons, avocado, beans etc. If you don't like cheese don't add it. You don't have to bake them if you prefer soft tortillas. Whole Orange Cake

This is one of my go to cake recipes that I have used for years in a food processor and adapted to the tmx. It is so quick and easy and more importantly, super moist and tasty!!! This can be frozen and thawed for an easy afternoon tea or for school lunchboxes.

Peanut Butter Honey Balls

I came across this recipe the other day and thought I would give them a whirl as my oldest son loooooves Peanut Butter. Ive adapted it slightly to suit our tastes. Thermo mixer peanut butter works a treat in these. My take on peanut spread recipe can be found here.

Almond French Onion Dip

This is a healthier version of the sour cream French onion dip. I thought of this in the middle of the night whilst up with the baby and thought I was a genius! I googled and it turns out others had the same idea. I haven't seen one done in the tmx so thought I would post. It's a much different taste to the sour cream version. It tastes nice with crackers and carrot sticks.

Spinach and Feta Dip

This is one for feta lovers! This is so versatile. Serve as a dip with veggie sticks and crackers. Stuff chicken breasts with the mix. Stir through cold cooked pasta  for a quick pasta salad. Use in gozleme or pizzas. Add 4 beaten eggs and make spinach pie. You can add some ricotta to this as well for a flavour burst!

Chicken, Bacon and Leek Pasta

This has been a favourite of mine for over 8 years when a lovely friend shared her version of this with me. A few tweaks later and this is a regular. Don't let the sour cream scare you. I hated sour cream before tasting this dish. You can switch it for the Philadelphia Cream for Cooking if you prefer that or Creme Friache. The flavour isn't as nice but still tasty. Cinnamon Oat Pancakes

  Perfect breakfast (or in my case brunch!). Serve with chopped banana, strawberry and a dollop of yoghurt or cream. Yummo!
