Chewy Peanut Bars

Does anyone know Jupiter Bars? They are a yummy chewy caramel peanut bar that I'm addicted to when I can find them. These are quite similar.   I'm going to be honest and say this was much easier to do by hand using a microwave to melt and wooden spoon and bowl to mix but I'm going to give you the tmx instructions below.   These are a yummy little treat and keep well in an airtight container for up to 2 weeks.

Weekly Task: Cheese

There are lots of things I do weekly: a new batch of granola, a batch of muesli bars for the lunchbox, baby purées. This is another.    Each week in my shopping I buy a 1 kg block of cheese or more. I cut the cheese up into small cubes. I keep half in a container for easy lunchbox items and I grate the other half in two batches. Lunchbox Prep: Bread Rolls

Today I'm doing my big back to school cook up. Something I try to keep in the freezer is bread rolls for when I run out of bread. I bake them, slice in half and freeze in a ziplock bag or some cling wrap and aluminum foil.    On the morning of school I take it from the freezer, top with filling, pop back in the ziplock bag and into the lunchbox to thaw for lunchtime.    I think I have found my new favourite bread roll shape.    Those that have been around for awhile know that bread is my favourite thing. Lunchbox Prep: Tahini Muesli Bars

If you love the taste of sesame seeds you will love this! It has a strong sesame flavour with hints of honey. I make these on a Sunday for the week ahead and just store in the fridge.  Awhile back I posted my take on Tahini. I used it to make these muesli bars for my sons lunchbox (can you tell my house was running low on lunchbox snacks!). Straight out of the fridge they are nice and firm.
