Tuscan Chicken and Spinach Pasta

This is a regular here. It's great on pasta but I also put it in pastry and wrap up into a parcel shape. This was the first time I did it in the tmx. I normally keep the chicken in chunks but I'm loving shredded chicken at the moment so decided to shred it. My version of Tuscan Seasoning can be found here.

Tuscan Seasoning

This has been a favourite of mine for many many years as its so versatile. It's quite expensive to buy compared to most blends so I thought I would give it a whirl in the tmx. It took awhile to get the right texture. I found table salt or fresh ground salt from the grinder worked best. You may need to change your quantities to suit your tastes.

We have had some great contributions so far!!!! Keep them coming.I will compile everything into a cookbook at the end of the month. Granola Cookies

I recently made some granola which is delicious! I can't wait to use it up as I have so many flavour combos I want to try. I thought I would use some to make cookies! Delicious and soooooo easy. This will be a staple here. For those mummies who eat lactation cookies these are a great alternative. Add 2 tablespoons of linseed meal and 2 tablespoons of brewers yeast to the mixture. Just some of my granola recipes: Honey Nut Maple Cinnamon Apple and Cinnamon Fruit and Nut Granola   I converted and tweaked this recipe.

Tahini Muesli Bars

Earlier today I posted my take on Tahini. I used it to make these muesli bars for my sons lunchbox (can you tell my house was running low on lunchbox snacks!).Straight out of the fridge they are nice and firm. At room temperature they are a soft muesli bar - my partner likes them like that.This were a massive hit here tonight! The taste of the sesame seeds is quite strong. My take on Tahini

This is my take on Tahini using sesame seeds and coconut oil. It gives it a lovely nutty taste. This will be turned into something for the lunchbox. Stay tuned!

Muesli Bars: Recipe Community

I stumbled across this recipe (link below) and thought I'd try it out as my hunt continues for a muesli bar that the kiddies will eat. I followed this recipe but made a few changes. I didn't put nuts in it so it could be school friendly and popped in the lunch box. I just put in extra pumpkin seeds and 40g flaxseed meal to replace the nuts. Next time I will make them a bit flatter to look more like store bought muesli bars as it's easier to eat and chew. The kiddies actually really like these. Nut and Wheat Free Muesli Slice: Recipe Community

Im eager to find a good muesli bar recipe as the kiddies love them and I spend a fortune on them. I'm not sure they will like this one to be honest as its quite dense but I'll try at afternoon tea time today and see how I go. They taste delicious and smell amazing. Milo and Flaxseed Cookies

Thermomix Recipes posted a great Milo Biscuits recipe this morning and I thought I would whip some up as a treat for my kiddies for afternoon tea.  I adapted the recipe slightly. Here are my changes: Reduced the sugar to 140g Added 1 teaspoon of vanilla bean paste  Added 1/4 cup of flaxseed (linseed) meal. You can barely tell the linseeds are in it. Cheese Ball

I love Cheese Balls for entertaining. They are something just a little bit different and so versatile.    The flavours can be changed to suit whatever you like. Chewy Caramel Tim Tam Cheesecake

My brother in law in coming over tonight for dinner which means I get to make a yummy dessert!!! Those that have been here awhile know I'm a cheesecake addict. As long as there is cheesecake in the world I'm a happy camper.    This is very indulgent! For the base I have used a packet of Tim Tams. You can of course use a plain chocolate biscuit or plain biscuits with a little cocoa powder added.    You can certainly use less Tim Tams for the filling and topping as well. Milo and Banana Muffins

It was time to stock the freezer with muffins today for my sons lunchbox. This is my "shove it all in and blitz" recipe. I have added flaxseed meal to this as I have a big bag of it and add it in all my baking lately, however you can leave it. You can also substitute the wholemeal flour for white.

Cinnamon Loaf

My partner LOVES cinnamon more than he loves me so I thought I'd make some sort of loaf that would be a good lunchbox snack. This was originally a CWA recipe from memory that I changed and tweaked a bit. It's a great recipe to use up that buttermilk you have from butter making! If you don't have buttermilk you can make it by adding 1 tablespoon of white vinegar or lemon juice to a cup of milk an letting if stand for 5 mins or so. Apricot Balls

My partner loves the little apricot pieces you can buy at the supermarket. Pity they cost a billion dollars for a tiny packet! There would be lots of recipes around for these. Everyone would have their own versions. I made these up yesterday and they were a hit. They don't taste exactly like the store bought ones and I've obviously changed the shape but they passed the test. I got 28 balls from this mix. I worked out the cost would be approximately $1.80 For the batch - much cheaper than a billion dollars!!!

Apple and Sultana Muffins

Its been awhile since I last made these. My boys used to love these when they were toddlers. This was the first muffin they were introduced to from memory. The 3 year old loves these, the 5 year old isn't to fussed either way and the partner says they are ok. These can be frozen and popped in the lunchbox to thaw. Because there is no dairy and no added fat the texture is slightly different to standard muffins. Be sure to use muffin cases or grease the muffin tin well to avoid sticking.
