Almond, White Chocolate and Coconut Nougat

My lovely friend Kristel recommended this recipe to me (link below). It was so easy to make. Much easier than expected. Very straightforward. I added roasted almonds, toasted shredded coconut and white chocolate to my nougat. The options are endless. I'm not a huge honey fan and this has a very very strong honey  flavour (obviously as it has 400g of honey in it! Haha). 120 Biscuits

I use this recipe quite a bit when I need a large amount of cookies for gifts or an event.  I used the Thermomix condensed milk and I reduce the sugar to ½ cup. I only cream the butter and sugar then add the condensed milk in the Thermomix. I then pour the wet ingredients in a big bowl with the flour and mix by hand. The dough freezes really well so I often only make a dozen at a time and freeze the remainder in logs. 2 Ingredient “Cookies”

Well these are a cross between cake and cookie in texture. I have seen this recipe floating around for years so thought I would try it out. Base recipe is 2 bananas and 1 cup of oats. I blitz the oats just to make them a tad finer. I add two bananas and blitz on speed 4 until just combined. About 10-15 secs. Fruitless Muesli Bars

I experimented with this muesli slice the other day and it has been a massive hit here with the kiddies and my partner. It is fruitless however you can certainly add fruit or nuts to it. Its very adaptable. I chop the slice up into bar shapes and wrap in baking paper. You could use cling wrap or zip lock bags. It is a softer muesli bar at room temp but still holds it shape well. Cathy’s Satay Chicken

I love testing out new recipes! Cathy sent me this recipe for our Viva Varoma! challenge. She didn't have a photo so I thought Id give it a whirl so I could show you what it looks like. This was very tasty. I think the key to this is using good peanut butter. A crunchy style would be delicious. Apple Cinnamon Granola

  This is one of my most favourite things to do lately.    There is something very therapeutic about something slowly toasting away and stiring it every so often. Watching the transformation from oats to a delicious granola is exciting! (I need a life dont I!?!) Baby Oat Cereal

Oats are a great first food for babies for those who are going down the purée and cereal route like me.   It's as simple as blitzing 150g oats on speed 9 for 20 seconds. Scrape down. Repeat. You want this to be a fine powder consistency. You can do more if desired. Just blitz for a little longer.    Store in an airtight container.   To use, mix with some boiling water. You can flavour it with milk, formula or fruit purée.

Baby Oatmeal Rusks

I would often make my older sons wholemeal rusks when they were younger but I thought Id experiment with oats this time. This take quite awhile to dry out and become hard. I don't suggest baking these on a hot day like I did.    These break a little easier then store bought risks. Rusks made with flour tend to be a lot harder I find. Cheats Veggie Sauce

Making your own pasta sauce is so easy. It really is a matter of chuck it all in and let it cook away. I love this one as I pack a lot of vegetables into it so perfect for the kiddies. I often purée this though so they can't see all the veg.    Use it with mince, over meatballs, with pasta/zoodles and a little cheese, on your chicken parmigiana, pizza sauce... The list is endless.    I make a double batch and freeze into portions. You can bottle it in jars and vacuum seal if preferred.

An easy cookbook stand

This is an easy way to display your cookbook for easy reading whilst cooking.  Simply use a pants/skirt clip coat hanger to clip your book in place. I've tested this with both the old  smaller EDC (shown) and the new larger EDC and it holds them in place fine.   Just be sure to hang it away from steam so you don't ruin your beautiful cookbook.    Another tip: be sure to have your tmx cooking and steaming away out in the open and not under wall shelves or cupboards to avoid steam damaging the finish on them.

Bread Rolls

Ok I think I have found my new favourite bread roll shape.    Those that have been around for awhile know that bread is my favourite thing. I love experimenting with different shapes and concepts. Curried Eggs

I finally did it! Yes Im the last person on the curried egg bandwagon again. So simple! All I did was put three eggs into the basket, into the bowl and top with cold water, just enough to cover the eggs. Using cold water helps prevent cracking the egg shells.    Set timer to 16 mins, speed 2, varoma temperature. These were just cooked through. Moist Chocolate Cake

This cake is so chocolatey and delicious!!!  We served it alongside custard but a nice ganache or glaze over the top would be lovely. Ice cream and fresh raspberries would be even better! Yum.    This is so simple it's one of my go to recipes. The trick to a nice moist cake is not over cooking it. Dont worry if you do, buttercream icing solves everything!

Cinnamon Scroll Pancakes

  I blame you all for this one! I started a Pinterest account so I could pin some recipes there for you (slowly getting my head around how it works!). I stumbled across a photo of Cinnamon Scroll Pancakes and thought I'd give them a whirl as my partner loves cinnamon more than he loves oxygen.   I used one of my basic pancake recipes for this and experimented with the swirl. It took a bit of experimenting to get the perfect swirl but I did it.
